"Carrots are packed with antioxidants, as are plump olives, the star of a healthy Mediterranean diet. If shaving carrots lengthwise seems too much work or difficult, you can shave them or cut them into thin slices. Fleshy green olives are delicious in this salad, although any olive, including black ones dried in oil, will add a pleasant briny and salty note to the mixture."
