White pepper, like black pepper, is made from the berries of the black pepper plant (Piper nigrum). Unlike black pepper, white peppercorns come from fully ripe berries, which are fermented in water to remove the outer layer, leaving only the inner seeds. White peppercorns have a sharper, more spicy flavor and a relatively mild aroma, making them more aromatic than black peppercorns. They are ideal for adding flavor to chicken dishes, fish dishes, sauces, salads, and potato dishes. However, they are not suitable for sweet dishes.
