Tarragon

Tarragon (Artemisia dracunculus), also known as estragon, is a perennial herb in the sunflower family. It is particularly suitable for chicken, fish, and egg dishes. Tarragon is the main ingredient in Béarnaise sauce. It is also used to flavor a popular carbonated drink in Armenia, Azerbaijan, Georgia (where it originated), as well as in Russia, Ukraine, and Kazakhstan. This drink, called Tarkhuna, is made from sweet tarragon concentrate and has a light green color. In Iran, tarragon is used as an addition to sabzi khordan (fresh herbs) or in Persian-style stews and marinades, especially khiar shoor (pickled cucumbers). In Slovenia, tarragon is used in a variation of the traditional sweet nut cake called potica. In Hungary, a popular chicken soup is flavored with tarragon.
