Fenugreek is an annual plant in the legume family (Fabaceae) with leaves composed of three small, obovate or oblong leaflets. Fenugreek seeds, cuboidal in shape and ranging in color from yellow to amber, are common in the cuisine of the Indian subcontinent, used both whole and powdered to prepare pickles, vegetable dishes, dal, and spice blends such as panch phoron and sambar powder. They are often roasted to reduce bitterness and enhance flavor.
